Warm and fluffy Cassava (Tape) cake with cheese.
INGREDIENTS
- 5 whole eggs
- 180 grams sugar
- ½ teaspoon vanilla essence
- 180 grams plain flour
- ½ teaspoon baking powder
- 150 milliliters melted butter
- 300 grams Tape (fermented cassava)
- 75 milliliters coconut milk
- Cheddar cheese, cubed
- Vanilla ice cream, for serving
- Raspberry sauce, for serving
- Raspberry, for serving
- Tuile, for serving
- Whisk the eggs in a bowl
- Add the sugar and vanilla essence, whisk it together
- Add plain flour, baking powder, melted butter, stir and set it aside
- Mash the fermented cassava in another bowl
- Add coconut milk, mix everything together
- Put the fermented cassava mixture into the flour mixture
- Whisk it again until everything is incorporated
- Put a bit of butter inside a ramekin
- Put 2 tbs of mixture in, then cheddar cheese in the middle, then mixture again. Grate cheddar cheese on top. Just fill it 3/4 full
- Baked it in the oven at 160 C for 30 minutes
